Jessica Sauvignon
Wine
Oakdene Jessica Sauvignon is grown in the cool maritime climate of Wallington on the Bellarine Peninsula. The vines were planted in 2002 in loamy soils over a clay loam subsoil.
The grapes are crushed and the juice is run to French oak barrels, where it is inoculated with yeast. Fermentation lasts for 10 days, then the yeast lees are stirred regularly over the next eight months prior to bottling.
Straw green, Oakdene Jessica Sauvignon has abundant fruit flavours with precise citrus acidity and a mineral edge, with oak adding texture. Cellaring potential is four years.
